How do the makers of Dictionaries look up the spelling of the words?

From the Oxford Dictionary, which has the master spellings.

Unless they are American and they replace all the s's with z's like Laser - Lazer or customised - customized

You're actually WRONG about the American spelling. In the case if -ize/-ise it was the British who chose to differ with the American spelling (which, incidentally, more closely reflects the Greek roots of the form)! Also, who says all dictionaries simply copy OED? And where does OED go?
